KCUL 0095 - Applied Kitchen Mathematics Clock Hours: 30 Applied Kitchen Mathematics encompasses procedures practiced in food service settings as well as applications of how and why foodservice employees would use math every day in the professional kitchen. Math is used to perform computations for ordering food and non perishable supplies, preparing recipes, calculating yields, determining food costs and pricing menu items to cover associated expenses.
